South Indian Egg Curry

Ingredients
6 large eggs, hard‑boiled, peeled
3 tablespoons coconut oil (or neutral oil)
1 teaspoon mustard seeds
1 sprig curry leaves (about 10–12 leaves)
1 large onion, finely sliced
3 garlic cloves, crushed
1-inch piece ginger, grated
2 green chillies, slit lengthways (adjust to heat preference)
2 medium tomatoes, chopped (or 1 cup canned chopped tomatoes)
1 teaspoon Madras Curry Powder (Curries And Varuvals Madras Curry Powder)
1/2 teaspoon South Indian Meat Masala (Curries And Varuvals South Indian Meat Masala) — this adds warm depth; adjust to taste
1 teaspoon Kashmiri chilli powder or paprika (for colour and mild heat; adjust)
1 cup thin coconut milk (or light coconut milk)
1/2 cup thick coconut milk (or cream of coconut) — added near the end for richness
1 teaspoon tamarind paste (or 1 tablespoon lime juice), to taste
Salt, to taste
Fresh coriander leaves, roughly chopped, for garnish
1 tablespoon coconut oil or ghee, for finishing (optional)
Method
Prepare eggs: Boil eggs for 9–11 minutes for hard‑boiled. Cool under running water, peel, and set aside. Optionally, make shallow slits or prick eggs with a fork so they absorb more gravy.
Temper spices: Heat 3 tablespoons coconut oil in a wide pan over medium heat. When hot, add mustard seeds. When they begin to pop, add curry leaves and let them sizzle briefly.
Sauté aromatics: Add sliced onion and cook, stirring, until soft and golden (8–10 minutes). Add crushed garlic, grated ginger and slit green chillies. Sauté for 1–2 minutes until fragrant.
Build the masala: Add chopped tomatoes and cook until they break down and oil separates from the masala (5–7 minutes). Stir in Madras Curry Powder, South Indian Meat Masala, turmeric, and Kashmiri chilli powder if using. Fry the spice mix for 2–3 minutes on medium‑low heat, stirring to avoid burning — this blooms the spices.
Add coconut milk: Pour in thin coconut milk and bring to a gentle simmer. Adjust salt. Simmer for 4–5 minutes so the flavours marry.
Add eggs: Gently add peeled eggs to the gravy. Spoon the gravy over the eggs so they’re well coated. Simmer for 6–8 minutes to let flavours infuse. If using tamarind paste, add now; or finish with lime juice at the end to brighten.
Finish with richness: Stir in the thick coconut milk or cream a minute before turning off the heat. Warm through gently — do not boil vigorously after adding thick coconut milk to prevent splitting. Taste and adjust seasoning and acidity.
Garnish and serve: Finish with a drizzle of coconut oil or ghee and scatter chopped coriander leaves.
Serving suggestions
Serve with steamed basmati rice, appam, dosa, idiyappam (string hoppers) or crusty bread.
Accompany with a crisp cucumber raita or lightly spiced vegetable stir‑fry.
