Aviyal & Kootu - Meals Special

Simple Aviyal

Ingredients:

  • Mixed vegetables (carrots, beans, drumstick, raw banana, yam) - 2 cups chopped

  • 1/2 cup grated coconut

  • 2-3 green chilies

  • 1/2 tsp cumin seeds

  • 1/2 tsp Madras curry powder

  • 1/2 cup yogurt (curd)

  • Curry leaves

  • Coconut oil - 1 tbsp

  • Salt to taste

Method: Cook the vegetables with turmeric and salt until tender. Grind coconut, green chilies, and cumin to a coarse paste. Add this paste and Madras curry powder to the vegetables, simmer for 2-3 minutes. Remove from heat, stir in yogurt and curry leaves. Finish with a drizzle of coconut oil.

Simple Kootu

Ingredients:

  • Vegetables (chayote/chow chow, bottle gourd, or pumpkin) - 2 cups cubed

  • Moong dal or toor dal - 1/4 cup

  • 1/4 cup grated coconut

  • 1 tsp Madras curry powder

  • 1/2 tsp cumin seeds

  • 2 dried red chilies

  • Mustard seeds, curry leaves for tempering

  • Salt to taste

Method: Cook dal and vegetables together until soft. Grind coconut, cumin, red chilies, and Madras curry powder with water. Add this paste to the cooked vegetables and dal, simmer for 5 minutes. Temper with mustard seeds and curry leaves in oil, pour over the kootu.
