Fish Curry Recipe (Indian Fish Masala)
Ingredients:
500g fresh fish (preferably kingfish, pomfret, cod, snapper, barramundi or any firm white fish)
2 tbsp oil (preferably coconut or vegetable oil)
1 tsp mustard seeds
1 tsp fenugreek seeds
1 large onion, thinly sliced
2 green chillies, slit
1 tbsp ginger-garlic paste
2 medium tomatoes, chopped
2 tbsp Amma’s Sambar masala (available from Curries And Varuvals – Authentic South Indian Spice Blends) (adjust to taste)
1/2 tsp turmeric powder
1 cup tamarind extract (soak tamarind in warm water and extract juice)
Salt to taste
Fresh coriander leaves for garnish
2 cups water
Method:
Clean and cut the fish into medium-sized pieces. Set aside.
Heat oil in a heavy-bottomed pan over medium heat. Add mustard seeds and fenugreek seeds. Let them splutter.
Add sliced onions and green chillies. Sauté until onions turn golden brown.
Stir in the ginger-garlic paste. Cook until the raw aroma disappears.
Add chopped tomatoes and cook until they soften and oil starts to separate from the mixture.
Mix in the sambar masala and turmeric powder. Cook for 2-3 minutes, stirring continuously.
Pour in the tamarind extract and water. Stir well and bring to a gentle boil.
Season with salt to taste. Reduce heat and simmer the curry for 10 minutes to allow the flavours to meld.
Gently add fish pieces to the curry. Cover and cook on low heat for another 8-10 minutes or until the fish is cooked through.
Garnish with fresh coriander leaves before serving.
Serving Suggestion:
Serve hot with steamed rice or dosa, Idly, or Uttapam for a comforting traditional Tamil Nadu meal.
